A Truffle or a “Cake Bite”?
The talent for cooking must run in the Mitchell Family. Doris Mitchell owns Uptown Cafe downtown Italy, her granddaughter Amber Hudson has her own catering business, Lady Ella Catering and now Ricky Whitney’s (Doris’s grandson) sister in law Stacey Tolliver makes her own creation, “Cake Bites.”
“I got this idea from a bakery in Cedar Hill. I ordered some small cakes and I am famous for going to a restaurant and tasting something and saying I can do this at home. With six children, we can’t go out to eat very often so I go home and recreate it. I went home and experimented with the small cakes and I came up with these “Cake Bites” and everyone loves them,” explained Tolliver.
Stacey is the volunteer coordinator for the breakfasts and lunches for the teachers at Advantage Academy in Waxahachie, ”This all started with a PTA meeting when I brought “Cake Bites” that were left over from our Super Bowl party to the meeting and everyone went absolutely crazy. They were all asking how do I get these?” She then started making them for the PTA members and teachers. She brought some Cake Bites to the Uptown Cafe and everyone started calling Doris wanting more and wanting to know when they were going to have more.
“I love cooking and baking, so I thought, I can do what I love to do and make money at the same time. Not everybody gets to do that,” said Stacey.
Tolliver runs her business out of her home, while raising her six children; Jamie 19 years old, Joshua 15 years old, Austin 13 years old, Garrett 11 years, Jared 10 years old and the only girl – Delany 5 yrs. old. She is currently looking for a building for a small bakery.
Cake Bites are small cakes covered with a candy coating and are covered with colorful drizzles. They look like truffles. You can choose white, chocolate, strawberry or red velvet cake and the coating can be any color. Stacey also delivers in Waxahachie, Milford, Italy and Avalon. For a dozen Cake Bites turn around time is one day – order it today and it will be delivered the next day. For larger quantities (four or more dozen) turn around time will be two to three days. Cake Bites are $10.00 a dozen, for larger orders you will need to call for pricing.
“I started out just feeding my family and trying to make them happy and apparently everyone else likes them too. So I would like to expand and eventually get a building for a small bakery, sell to communities and make everybody happy,” Tolliver said.
